I think Vereen is the safest option of the three, but Cooks is kind of an exciting option. If the rest of your roster is pretty solid I might gamble on the Saints rookie against a Carolina defense that has struggled all year.

I trust Floyd the most of the three. Not sure how he was held catchless last week against a not so great Eagles D. But he should bounce back this week. That would be my pick.
